Crockpot meatloaf and potatoes: Grandma’s new twist

Meatloaf  Ingredients
3 pounds low-fat hamburger
3 large eggs
1 teaspoon holiday seasoning mix from the green bean casserole recipe posted earlier, or 1 package of a meatloaf seasoning mix.
1 cup catsup
1 sleeve of saltine crackers crushed

Combine all of the above ingredients stirring with a sturdy spoon. Let set 10 minutes then at this point. I find it works best to dive right in with your hands and mix again. Place in at least a six-quart crock pot forming into a loaf. Wrap potatoes in foil and place around outside rim of loaf as shown below.

Cover and cook on high for 4 hours. Uncover and if need be spoon off extra liquid. Cover again and continue cooking for two more hours on high.

You can use this recipe as Grandma would have made it in the oven also.

Meatloaf Topping ingredients
1 cup catsup
1/2 cup sweet chili sauce
2 Tablespoons brown sugar

Place all the above ingredients in pan stirring until it thickens using medium high heat.

To serve, I cut the meatloaf in half with a spatula and plated it putting the two sides back together, sliced it into serving sizes, than covering it with the topping. Enjoy!
