Now for something completely different: Oatmeal pancakes

Oatmeal pancakes
2 cups oatmeal 
1 teaspoon baking soda 
4 eggs
1/2 cup vanilla yogurt
1/4 cup honey
1 teaspoon pure vanilla 
Blueberry’s – around 3 cups 

Grind the oats to a course consistency in a food processor. Combine wet ingredients in a bowl and the dry ingredients in another mixing each well. Mix together and fry in a buttered non stick frying pan over medium heat by placing a small scoops of batter leaving enough space to flip easily, than placing the blueberry’s spaced on top of each pancake.

When browned on outside edges flip quickly and carefully. Finish up with the other side browned up nicely til the batter is done.

Serve with your favorite toppings immediately.
