Apple cake with cream cheese frosting brings smiles

Save a cup of that strong brewed morning coffee to make this family favorite. Guaranteed to put a smile on their faces for the evening dinner gathering.

Cake Ingredients:

2 cups dark brown sugar

1 cup butter room temperature

2 cups apples, not peeled, diced

1 cup cold coffee

1 cup chopped walnuts (or nuts of choice)

1 cup raisins

3 cups flour

2 teaspoons soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cloves

1 teaspoon nutmeg

1 teaspoon cinnamon

2 large eggs

Cake Directions:

Cream together the dark brown sugar with the room temperature butter adding in the coffee along with the eggs. Set aside, in another mixing bowl sift together the dry ingredients stirring in the nuts, apples, and raisins in the dry flour mixture.

Combine all ingredients placing in a greased 9×13 inch cake pan baking for 45 minutes in a preheated 350 degree oven. You can tell when the cake is done when an inserted toothpick comes out clean.

Cream Cheese Frosting:

Ingredients:

1/2 cup butter softened

8 ounces cream cheese softened

1 teaspoon vanilla extract

1 pound box of confectioners sugar

Frosting Directions:

Melt the butter until just softened (low heat as not to get it hot) placing it in a large bowl. With an electric mixer add in the softened creamed cheese mixing until well blended. Add in the confectioners sugar along with the vanilla beating with a mixer until smooth and creamy scraping the sides as needed. Mix until smooth and creamy. Frost when cake has cooled down and enjoy!
