The train wreck breakfast makes good use of leftovers

Train wreck breakfast is a good morning meal made up of leftovers to start out a good day either for camping or at home that actually came from Grandpa’s recipe box.

Start by gathering up from the cooler or fridge the leftover meats, vegetables and baked potatoes. Brown the meat and onion in a slightly greased fry pan, add the potatoes peeled and cubed, fry up until crispy brown.

In a mixing bowl add one egg per person mixing a 1/4 cup of milk until well blended with seasoning of choice. Add this to the meat mixture in the frying pan stirring until eggs are done.

Last, but not least, stir in 1 cup shredded cheese of choice. I always like to use the shredded sharp cheddar, but with this train wreck, 4 slices of Havarti slices were used.

The moral to this recipe is any meat and vegetables your family enjoys can be used in this recipe. Some also like a splash of hot sauce to go with it.
