It’s true that carrots are the star of the show, but the delicious frosting has to come close! To grate the carrots, use the large-hole side of your cheese grater and measure the grated carrots by piling them loosely in your measuring cup.

Do not pack them in.

Grandma always said to finely grate the carrots rather than use them too chunky. The finer you grate the carrots, the more evenly the carrots will be baked throughout the cake.

Store cake covered in the refrigerator.
