Corn fritters make a great treat or side dish

Bursting with deliciously sweet corn kernels this recipe makes for a great treat or side dish.

Ingredients:

2 cups of drained canned corn

3/4 cup liquid from the canned corn

1/4 cup milk

1 1/2 cup sifted flour

2 teaspoons baking powder

1/2 teaspoon salt

Cooking oil

Directions:

Preheat your oil in your favorite skillet for frying your fritters to 365 degrees. While waiting for it to heat up, take a mixing bowl and mix together the dry ingredients – flour baking soda and salt.

Stir together the liquid from the canned corn and milk (one cup total) and last but not least stir in the drained corn kernels.

When ready, drop fritter batter by spoonfuls into heated oil frying until golden brown on each side. Drain on paper towel. Can be drizzled with honey or syrup. Enjoy!

Grandma always used to cut kernels from a left over cob of sweet corn, and used the water they were boiled in for that extra flavor in this yummy breakfast treat.
