Grandma’s Tuna Patties provides versatile tasty fare

by Kathy Hamman Miller

Grandma’s Tuna Patties

2 – 5 ounce cans of tuna
2 medium eggs
1/2 cup Italian style bread crumbs
1/4 cup Mayo

Combine thoroughly all the above ingredients. Shape into Patties placing into a well oiled frying pan. Crisp fry until nice and toasty brown on both sides.
There are so many variations Grandma would do with this recipe, and you can too. By changing up to canned salmon or chicken instead of the tuna, crushed ritz crackers with salt and pepper for seasoning instead of bread crumbs, Miracle Whip instead of Mayo, and of course you can use butter instead of oil.

We’ve even used left over fish fillets while camping done up on the grill! Enjoy!
