Ingredients:

3 tablespoons olive oil

1 12 oz bag frozen sliced carrots

1 small sweet onion diced

2 pounds ground turkey

1 quart stewed tomatoes (28 ounce can)

32 ounces of low sodium chicken broth

29 ounce can cannellini beans drained and rinsed.

Salt and pepper to taste

2 pkgs spaghetti spices and seasoning mix.

3/4 cup of small pasta

Directions:

Pour the oil into a large pot, heating over medium high heat, sauté diced onions and frozen carrots until onion is translucent. Add in the ground turkey and cook until no pink remains, breaking apart as it cooks. Drain off any grease. Pour in the one quart of stewed tomatoes, chicken broth, drained and rinsed beans, bringing to a boil. Reduce the heat, stirring, to blend in the spaghetti seasoning packets, adding the salt and pepper to taste. About 10 minutes before you are ready to serve, add the pasta, reduce the heat, simmer. Ladle into bowls, serve and enjoy!
