Marmalade bars — so brunch will never be the same again

by Kathy Hamman Miller

Made these moist and tasty bars for a brunch in place of donuts – they really worked out great. Brunch will never be the same again!

Preheat oven to 350 degrees. Store in refrigerator if you have any left.

Ingredients for the cake:

1 15.25 ounce white cake mix

1 stick (1/2 cup) melted butter

8 ounces cream cheese room temperature and cut into pieces

18 ounce jar sweet orange marmalade divided – 1 cup cake – 1/2 cup frosting

1 egg

1/2 tsp vanilla

1 cup chocolate chips (optional)

Directions:

In a large mixing bowl add the powdered cake mix making a well in the center. Place the cut up room temperature cream cheese inside the well of cake mix, pouring the warm melted butter slowly over the creamed cheese, stirring all until combined thoroughly. Add to this mixture the vanilla, eggs, and chocolate chips.

Place in a greased 9×13 baking dish, baking in a preheated 350 degree oven for 30 minutes. Take out of oven, dusting it with confectioners sugar setting aside to cool, or I used the following frosting recipe.

Ingredients for the frosting:

1 lb. box of confectioners sugar

1 (1/2 cup) stick melted butter

1/2 cup orange marmalade

2 tablespoons orange juice

Directions:

Melt butter, mix in the 1 lb. box of confectioners sure, add marmalade and orange juice. Stir well and frost. Enjoy!
