Cookie Wet Ingredients:
1 cup butter
3/4 cup brown sugar packed
1 cup sugar
1/2 cup pumpkin
1 teaspoon vanilla
1 large egg
Cookie Dry Ingredients:

2 1/2 cups flour
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
1/2 teaspoon salt
Icing Ingredients:
1 cup powdered sugar
2 tablespoons maple syrup (I used the cinnamon infused brand this last time)
1 tablespoon milk
Directions:
In a medium size mixing bowl set out butter to get to room temperature.
In another bowl whisk together the dry ingredients. Flour, spice, soda, and salt, setting aside.
When the butter has softened, preheat oven to 350 degrees and line the baking sheets with parchment paper.
Next, blend the softened butter together with the sugars, followed by the rest of the wet ingredients, pumpkin, vanilla, and egg.
Mix the wet ingredients together with the dry ingredients.
Drop cookie dough by spoonfuls onto the lined baking sheets baking at 350 degrees for 12 to 14 minutes until done. Makes about three dozen. Let cool and top off with drizzling on the glaze.
Happy Fall Y’all! Enjoy!
