Almond biscuits provide new twist on old favorite

Almond Biscuits

Ingredients:

8 ounce block of cream cheese

3 cups shredded mozzarella cheese

4 eggs

4 tablespoons baking powder

1 1/2 cup almond flour

Butter to coat 12 inch cast iron skillet

2 tablespoons melted butter for topping

Directions:

Coat your cast iron skillet with butter. Melt your cream and shredded cheese together in a saucepan over medium heat stirring until smooth. Set aside, removing from heat.

In a large bowl combine the baking powder, almond flour, eggs, and melted cheese, mixing until smooth. Set aside for 10 minutes.

I use a 1/2 cup measuring cup to scoop dough and place in the 12-inch skillet, you don’t have to fill it level, works great to scoop it.

Preheat oven to 400 degrees and let set for another 10 minutes. Bake for 20-25 minutes until golden brown. Brush the biscuits with melted butter while still warm.

A new twist on an old favorite, these biscuits make for a great side for any meal. Just wait until you try them with sausage gravy.
