Avoid the heat by making Peanut Butter Crunch Bars

by Kathy Hamman Miller

Too hot to cook? If you haven’t already made this easy no bake, stay out of the heat dessert recipe, you’ll want to try it for sure! It’s also really easy to cut in half to make a smaller batch.

Ingredients:

1 cup salted butter, a little extra for greasing the dish

1 cup graham cracker crumbs

2 cups powdered sugar

1 1/2 cups creamy peanut butter

1 1/2 cup rice krispies cereal

2 cup dark or milk chocolate chips melted

2 tablespoons coconut oil

Directions:

Coat a 9×13 baking dish scantily with butter. In a large bowl, melt 1 cup of butter in the microwave checking every 30 seconds until just melted. Add the peanut butter and stir until fully mixed together without any lumps. Mix in the powdered sugar, graham cracker crumbs. Stir in the rice krispies cereal and then press in the bottom of the pan.

In a small microwave safe bowl, add the chocolate chips and coconut oil measuring when melted to make 2 cups. Microwaving in bursts of 15 seconds, stirring in between.

Pour the melted chocolate over the peanut butter layer and allow to completely firm up before serving, if you can wait that long. I have put it in the fridge to hurry it up a bit. Enjoy!
