Blueberry ‘Cottage’ muffins have wet and dry ingredients

Preheat oven to 400 degrees. Line 12 muffin cups with paper liners.

Directions:

Whisk the wet ingredients together in a small bowl and set aside.

In a medium size bowl, mix the dry ingredients together then stir in the blueberries to coat, this will keep them afloat instead of sinking while baking.

Mix the dry and wet ingredients together. Divide

Wet Ingredients:

1 cup “cottage” cheese

1/3 cup melted butter

1 teaspoon lemon zest (optional but tasty)

3 tablespoons lemon juice

1 teaspoon vanilla

Dry Ingredients: 

2 cups flour

1/2 cup sugar

1/4 teaspoon salt

1/2 teaspoon baking soda

2 teaspoons baking powder

1/2 teaspoon nutmeg

1 rounded cup frozen (not thawed) blueberries.

Bake in a preheated 400-degree oven for 20 to 23 minutes or until muffins are golden brown and a toothpick inserted comes out clean. Enjoy!
