Ingredients:
2 cups rotisserie chicken chopped
1 cup finely chopped spinach
1 tablespoon dried dill
Seasoning of choice
2 teaspoons minced garlic (2 cloves)
1 cup shredded mozzarella cheese
1/4 cup Parmesan cheese
1/2 cup flour of choice
2 large eggs
Oil for frying (I used olive oil)
Brioche Buns
I used Honey mustard, spinach leaves, sliced tomatoes, and cheese for garnish.
Directions:

In a large mixing bowl combine all of the above ingredients, mixing well to combine. Heat a thin layer of oil in a large skillet over medium heat. I divided the recipe into 6 large scoops, dropping into the heated oil flattening them slightly with a spatula and scraping the undersides while frying, so not to stick. Fry them 3 to 4 minutes on each side. Remove from skillet serving with condiments of choice, on a brioche bun. Enjoy!
