Chile casserole dish is easy and comforting

An easy comforting Chile Casserole loaded with those flavors we all love.

Ingredients:

2 cups uncooked pasta – like elbow or shell

2 pounds – lean ground meat

1 – medium onion chopped

1 – 28 ounce can of diced tomatoes

1 – 6 ounce can tomato paste

1 – 16 ounce can black beans drained and rinsed

1 – 4 ounce can chopped green chiles

1 package of your favorite chile mix

3 cups shredded low fat Mexican cheese blend

Chopped fresh green onion (optional)

Directions:

Cook macaroni according to package directions – al dente. Meanwhile, in a large nonstick skillet, fry the beef and onion over medium heat until meat is crispy brown, drain. Stir in the tomatoes, beans, tomato paste, chiles, and chile mix. Drain macaroni; add to beef mixture.

Transter to a 13×9-inch baking dish coated with cooking spray.

Cover and bake at 375° until hot and bubbly, about 25-30 minutes.

Uncover; sprinkle with cheese.

Bake until cheese is melted, about 5 minutes longer. If desired, top with sliced green onions. Enjoy!
