Colorado Cookies offer something new from old

From my 93-year-old mother’s, Aunt Etta’s recipe box — I love when we can try something new, from something old. Turned out to be a great find! Makes two dozen large soft cookies.

Ingredients for the cookies:

1 cup shortening – I used butter at room temperature

3/4 cup sugar

1 cup cooked, mashed carrots or if you don’t have that on hand, I found a 15 ounce can of the slices works great too. Just drain dry, and mash them up.

1 unbeaten egg

1 teaspoon vanilla

2 cups sifted flour

2 teaspoons baking powder

1/2 teaspoon salt

Preheat oven to 350 degrees.

Ingredients for Golden Glow Frosting:

1 tablespoons juice from a sweet orange

3 tablespoons freshly grated orange rind from a sweet orange

1 tablespoon butter at room temperature

1 cup confection sugar

Directions for cookies:

Mix the dry ingredients in a bowl, set aside. In a large bowl, take the room temperature butter, cream in with the sugar. Add the mashed carrots, pure vanilla, and egg. Fully incorporate the wet and dry mixtures in the large bowl. Bake at 350 for 15 to 17 minutes.

Directions for Golden Glow frosting:

Melt the tablespoon of butter until just soft, blend in the 3 tablespoons of freshly grated orange rind. Cream it in with the confectioners sugar, add the tablespoon of orange juice. Makes a great glaze. Topping the cookies while they are still warm. Enjoy!
