Cool and frost this delicious seasonal apple cake dessert

Save a cup of that strong brewed morning coffee to make this family favorite. Guaranteed to put a smile on their faces for the supper gathering.

Cream together 2 cups dark brown sugar and 1 cup butter, set aside.
In large bowl stir together all of the dry ingredients. 3 cups flour, 2 teaspoons baking soda, 1 teaspoon baking powder, 1/2 teaspoon salt. 1 teaspoon of each of the following, ground cloves, ground nutmeg, and ground cinnamon.

Place 1 cup of walnuts, 1 cup of raisins, 2 cups of diced not peeled apples into the dry ingredients. Stir to dust the new additions. In the creamed mixture add 1 cup of cooled strong coffee, and 2 eggs. Beat the dry and wet ingredients together.

Place in greased 9- by 13 –inch cake pan and bake for 45 minutes in a preheated oven at 350 degrees. You can tell when a cake is done when an inserted toothpick comes out clean.  Cool and frost.

Creamed Cheese Frosting

Mix 4 ounces of softened butter, 4 ounces of softened cream cheese, 2 cups confectioners sugar and 1 teaspoon vanilla extract. With mixer on low speed add the confectioners sugar a little at a time until smooth and creamy. Beat in vanilla. Frost and  Enjoy!
