Delicious and colorful beet salad is a healthy choice

Packed with nutrition, beets are known to have great health benefits. I didn’t know this as a kid, just enjoyed the surprisingly great taste.

Ingredients:

3 medium beets about 1 pound

1 tablespoon olive oil

Juice of 1/2 of a lemon

3/4 tsp sugar

1/2 tsp white vinegar

Pinch of salt

Instructions:

Preheat oven to 350 degrees.

Cut stems off beets and scrub clean, baking covered in oven for approximately one hour.

You don’t want them over done. While waiting for the beets, mix the olive oil, lemon juice, salt, and vinegar together and set aside. Take the beets out of the oven and set aside to cool.

Once cooled, peel and grate the beets on the larger setting of a vegetable grater. Mix with dressing, refrigerating for at least 4 hours or overnight. Enjoy!
