Pineapple Pecan Cake
with Creamed Cheese Frosting
Cake ingredients:
2 cups flour
2 cups sugar
2 teaspoons baking soda
2 cups chopped pecans (Grandma used walnuts)
2 eggs
20 ounce can of crushed pineapple
Preheat oven to 350 degrees and set out the butter and cream cheese for the frosting to get to room temperature for later.
Combine the dry ingredients in large mixing bowl stirring in the chopped pecans to coat. Combine wet ingredients, including the eggs and the juice from the canned pineapple in another bowl, then stir together everything until combined.
Place in greased standard size cake pan and bake for 45 minutes or until a toothpick inserted comes out clean. Cool completely.
Cream cheese frosting ingredients:
1 box of confectioners sugar
1/2 cup of butter or margarine
8 ounces of cream cheese
1 teaspoon vanilla
1 to 2 teaspoons milk if desired
Cream the softened butter and creamed cheese together than add the rest of the ingredients gradually blending together to get the right consistency. Frost the cooled cake and Enjoy!
