Townbroadcast is welcoming its newest column, focusing on recipes from days gone by, as provided by Kathy Hamman Miller, a staffer at the Then & Now Historical Library in downtown Dorr.
The gang at Then & Now is working on a historical book of recipes from generations ago in these parts. The book will be available for sale one it has been completed.
Miller comes by this effort naturally because her mother, Shirley Hamman, was Allegan County Cooperative Extension Home Economist for many years and is now retired.
Miller, who lives in Dorr, touts the series as, “Old time recipes collected from grandmothers — then and now — for the pure enjoyment of family get-togethers.”
Her first installment this week:
Caramel Corn
To make one serving, fill roaster pan with 15 cups of popped corn.
Mix 1 cup brown sugar
1/2 cup oleo, or grandma always used butter
1/4 cup light corn syrup, or Grandma always used honey
1/2 tsp salt
Stir occasionally in a large sauce pan until bubbling around edges. Continue cooking over medium heat for 5 minutes or 7 minutes if doubling the recipe. Remove from heat and let the kids watch you when you do the next step! Stir in soda until foamy.
Pour mixture over corn and bake for one hour at 200 degrees, stirring every 15 minutes. Enjoy!
What kind of soda and how much. Didn’t see it listed in the recipe.
The recipe called for 1/2 teaspoon of baking soda. Have fun with it when you add it in as it will foam up, so make sure you use a large saucepan. Enjoy!
Thank you kindly, exactly what we all need during these trying times.
