OK, here you go with the smaller version of the original recipe of Monster Cookies that you had asked for. This one makes two dozen cookies instead of the 18 dozen monster size recipe that was posted before!
I still made the larger version that’s shown here, as the Easter Bunny requested this done for baskets. Enjoy!
Ingredients:
1 cup white sugar
1 cup brown sugar
1/2 cup softened butter
1 tablespoon vanilla
3 large eggs
1 tablespoon honey or corn syrup
1 1/2 cups creamy peanut butter
4 1/2 cups quick oats
2 teaspoons baking soda
3 cups of a combination of additional goodies such as –
1 cup semi sweet chocolate chips
1 cup mini M&M candy baking pieces
1 cup mini butterscotch chips

Directions:
Preheat your oven to 350°F and line baking sheets with parchment paper. In a large bowl, cream together butter, peanut butter, brown sugar, honey, and granulated sugar, until light and fluffy. Beat in eggs one at a time, then add vanilla extract. In a separate bowl, combine oats with the baking soda. Gradually add to the wet mixture, mixing well. Fold in M&M’s, chocolate chips, and sprinkles. Drop rounded tablespoons of dough onto the prepared baking sheets.
Bake at 350 degrees for 10-12 minutes, or a little longer if you make them bigger than a 1 inch cookie scoop. Don’t over bake, they should look just set.
