Mini-Cheese Cakes, using vanilla wafers, a real treat

Mini-Cheese Cakes

Place 24 cup cake liners in muffin tins and place a single vanilla wafer in each.

Preheat oven to 375 degrees.

Beat until light and fluffy:
16 ounces of room temperature cream cheese
3/4 cups sugar
2 eggs
1 Tablespoon lemon juice
1 teaspoon vanilla

Bake until set – 15 to 20 minutes
Let cool.

Store in refrigerator until ready to eat and serve with a spoonful of your family’s favorite variety of canned pie filling on top.
