Recipe Ingredients:
1 3/4 cups peanut butter divided
3/4 cup (1 1/2) sticks of butter softened
2 cups powdered sugar divided
4 cups graham cracker crumbs
2 cups mini semi sweet chocolate chips
Crust Ingredients:
I used 18 sheets of cinnamon graham crackers to make into crumbs (4 cups)
If using regular graham crackers add 1/4 cup sugar and 2 teaspoons cinnamon.
1 1/2 cup peanut butter
3/4 cup butter
1 3/4 cup powdered sugar
3/4 cup mini semi sweet chocolate chips
Topping Ingredients:
1/4 cup peanut butter
1 1/4 cup mini semi sweet chocolate morsels
Topping Instructions:
In an uncovered glass bowl or measuring cup add the 1/2 cup peanut butter and 1 cup of the semi sweet mini morsels. Microwave on high power for 45 seconds and stir. Microwaves vary with the heating process, so if needed heat additionally in 10 second intervals. Spread over graham crackers crust in pan, refrigerating for at least an hour until chocolate is firm before cutting into bars. Store refrigerated in air tight container.
Crust Directions:
Grease a 13 x 9 inch baking pan
Mix the butter and peanut butter together in a large mixing bowl until nice and creamy. Gradually beat in 1 cup of the powdered sugar. With a large spoon or hands combine the rest of the powdered sugar (3/4 cup), graham cracker crumbs and 1/2 cup of the mini chocolate morsels. Press evenly into the prepared baking dish smoothing the top with a spatula. Set aside.
