This easy to make pumpkin muffin recipe has only five ingredients and is great when you’re short on time and need to whip up something tasty to serve that works for any time of the day, oh, and the smell that will fill your house! Here’s what you need to do to: preheat oven to 350 degrees. Prep muffin tins for 2 dozen regular sized muffins by either greasing or using paper liners.
Ingredients:
1 box spice cake mix
Heaping cup of raisins or chocolate chips
1 can 15 ounce can pumpkin purée
2 eggs
1/4 cup liquid
Mix the pumpkin, eggs, and liquid (your choice of milks or water) in a mixing bowl. Empty the cake mix and raisins or chocolate chips in another mixing bowl stirring together to coat.
Mix all the ingredients together. Be aware that the batter will be thicker then the usual box cake mix batter. Use a cookie scoop to fill the muffin cups around 3/4 of the way full. Then pop them into a preheated oven and bake for 18 minutes. Add additional time if you’re using the larger size muffin tins. Enjoy!
