Remember bacon smell in Grandma’s kitchen?

Mmmm remembering that smell of bacon walking through Grandma’s kitchen.

Ingredients:

12 slices bacon

1/4 cup bacon grease left from the just fried bacon, or olive oil

Medium size sweet onion, diced

1/3 cup water

1/4 vinegar

2 Tbsp. brown sugar

2 Tbsp. granulated sugar

Raisins

Walnuts chopped

10 ounce bag of Baby Spinach

Optional: 

Hard boiled eggs diced, or cut up apple pieces are really good in this too.

Directions:

In a medium skillet, fry the bacon until tender crisp. Set aside on a paper towel lined plate. Remove all of the bacon grease placing it in a heat proof bowl leaving the good crispy brown bacon flavor at the bottom of the pan.

Return to skillet – 1/4 cup of your choice in oil or the bacon grease, diced sweet onions, water, vinegar, and the brown and white sugar. Continuously stir over medium heat until onions are just tender and the dressing is thickened. Set pan aside while you get your salad put together, this will allow the dressing to cool down just a bit so it doesn’t wilt the salad.

Combine the raisins, chopped walnuts, the bacon cut or broken into squares, the optional apple chunks, hard boiled egg pieces, to a bowl of cleaned and dry baby spinach. Serve with the warm dressing poured over the salad. Enjoy!
