Roast sweet potatoes savory meal addition

An easy sheet pan recipe that makes a great sweet and savory addition to any meal.

Ingredients:

5 lbs sweet potatoes

1/2 cup melted butter (or oil of choice)

1 envelope Good seasons Italian dressing and recipe mix (or seasoning of choice)

Directions: 

Preheat oven to 425 degrees. In a large bowl place the 1/2 cup of melted butter. Peel and cut the sweet potatoes in 1/2-inch cubes. Continuously adding the cut potatoes and stirring to coat. Arrange the sweet potato chunks in a single layer on a 17 1/2 x 13 inch baking sheet, sprinkle the seasoning over the top.

Place in a preheated 425 degree oven on the center rack. Bake for 40 to 45 minutes tossing every 15 minutes until tender and golden brown.

This does make a family size batch, but is easy to cut in half, just bake for 10 minutes less.
