Ingredients:

2 cups old fashioned oats

1 teaspoon baking powder

1 teaspoon cinnamon

Pinch of salt

2 overripe bananas

1 1/2 cup almond milk

1/4 cup creamy peanut butter

3 tablespoons maple syrup or honey

1 tablespoon ground flax seed

1 teaspoon vanilla extract

Instructions:

In a large mixing bowl mash the bananas. Stir in the almond milk, maple syrup, vanilla, peanut butter, and ground flax seeds, setting aside allowing the flax seed to set in the liquid for at least five minutes while you’re preparing the rest. This is the time I preheat the oven to 375 degrees.

Mix together the oats, cinnamon, baking powder, and salt. When the oven dings to let you know it’s preheated to 375 degrees, is usually the five minutes it takes for the ground flax to set.

When ready, mix the dry ingredients into the wet ingredients thoroughly. Bake uncovered in an 8×11 baking dish, or I used a deep dish pie plate, for 30 to 35 minutes until it’s set and top is golden. If you insert a knife and it comes out clean, it’s done.

Remove from oven and allow to cool for five minutes. You can serve with drizzled maple syrup, honey, sprinkle it with a little cinnamon sugar, add banana slices and fruit of choice if desired. Enjoy!
