Souffle: It’s for breakfast and can easily be done

You can make this dish up the night before, which makes for an easy family breakfast:

Lightly grease a 9 x 13 baking dish.

Using sliced buttered bread, line the bottom of the baking dish with butter side down.

Beat a dozen eggs with 1 1/4 cup milk, add salt and pepper if needed, whisk until blended and set aside.

The next step is completely up to you! Add a thin layer of fried bacon, or sausage, or both over the bread.

Sprinkle with “about” 3 cups shredded cheese, your choice again, Colby is my favorite.

Cover with the egg and milk mixture. Sprinkle the rest of the cheese over the top lightly.

Cover with foil and rest in the refrigerator over night.

Bake uncovered in oven for 1 hour at 300 degrees.

You can tell when it done when a knife inserted comes out clean.

Another favorite with this recipe is to use fried hamburger that has taco seasoning in it without any liquid, using the Mexican-style blend of shredded cheese that you like, served with Texas Pete, or your favorite hot sauce.
