Sugarless Butterscotch Cookies from old cookbook

Did you ever see a recipe from an old community cookbook that you just had to try? Well this one has been on that list for a while, so here goes. It will be interesting to see how these turn out!

Preheat oven to 375 degrees.

Ingredients:

½ cup butter

¼ teaspoon salt

1 3.5 oz. package cook and serve butterscotch pudding powder

1 egg

¼ cup milk

1 cup quick cooking oatmeal

1 cup flour

½ teaspoon soda

½ teaspoon baking powder

½ cup butterscotch baking chips

½ cup chopped nut meats

Directions:

Cream softened butter; add the dry pudding powder gradually creaming together. In another bowl, mix together all the dry ingredients. Add the butterscotch chips along with the chopped nuts, stirring to coat. Mix the wet ingredients with the dry. Drop from teaspoon on greased baking sheet.

Made a dozen and half cookies. I used chocolate chips this time, but will use the butterscotch chips when I make these up again. I liked the texture and thought this would make a great gift in a jar recipe.

Just layer all the dry ingredients in a jar. Layer the butterscotch chips, nuts, then add the packaged pudding mix on top. Screw on the lid and hang a recipe card so they know how to put it together with the egg, milk, and butter they add.

Bake at 375°F for 10 minutes. Enjoy!
