This recipe was copied from a recipe card my Grandmother had written out for me as it was and continues to be a family favorite. So, if you’re looking to warm up your kitchen these cooler days with a great tasting meal and wonderful smells, this will turn out to be a favorite for your family. Enjoy!

Ingredients:

3 pounds your choice of bone in chicken breasts, legs, thighs

3/4 cup uncooked rice

Salt and pepper

3 ounce can mushrooms

1/2 stick butter or margarine

1 tablespoon grated sweet onion

2 chicken bouillon cubes dissolved in 1 3/4 cup hot water

Directions:

Flour and brown chicken in a little butter or margarine. While it browns put rice with the salt and pepper added to taste in a greased casserole dish. Sprinkle the chopped onion over the rice add the can of mushrooms including the juice. Arrange the browned chicken on top, pour the bouillon over the top dotting with the butter. Cover and bake for one hour or until chicken is done in a 350-degree oven.
