This Chicken and Rice Bake is an easy meal prep, nutritious meal the fam is sure to enjoy. Preheat oven to 350 degrees.
Ingredients:
3 pounds chicken breast, with butter for browning.
8 ounces of fresh Bella mushrooms cleaned and sliced.
2 boxes Uncle Ben’s original long grain and wild rice.
1/2 cup (1 stick) butter cut into thin slices.
3 cups chicken broth.
Directions:
Brown the chicken in butter on both sides until almost cooked through. Place the two boxes of uncooked rice in the bottom of a 9×13 greased casserole dish. Layer the cleaned fresh mushroom slices on top of the rice, topping off with one of the season packets from the Uncle Ben’s rice box. Arrange the browned chicken on top, sprinkling the other seasoning packet over the top of everything. Pour the chicken broth over the top slowly and dot with the sliced butter.
I like to do the outside edges of casserole and one on the top of each piece of chicken to keep it moist. Bake at 350 degrees covering with foil for one hour removing foil then baking for another 10 minutes until chicken is done and rice has absorbed the moisture and tender.
Serve with veggies and enjoy!
